Milton Park Vineyard is home to the Thorn-Clarke winery in South Australia, owned and operated by the Clarke family for six generations.
The nose displays lifted berry fruits, with hints of dark chocolate and spice. The palate is medium bodied with intense plummy fruit which fills the whole palate and, combined with the soft and approachable tannins, creates a very mouthfilling wine. The length of flavour is long with plum and liquorice fruit, and spicy oak.
The grapes were crushed and de-stemmed into fermenters, where yeast was added immediately. The ferments were pumped over twice daily to maximise colour, tannin and flavour extraction and cooling was used to ensure ferment temperatures remained in the 22-25°C range which allows maximum fruit expression. Pressing took place approximately seven days after crushing and the wine was put into predominately American oak (of which 10% was new) to mature.
