Production Notes

The Casablanca Valley is characterized by its proximity to the Pacific Ocean and receives a maritime influence through coastal breezes that moderate temperatures. The landscape generally consists of rolling hills that rise toward the east and the Coastal Mountains. The poor, shallow soils are alluvial in origin with sandy loam textures, good permeability, and relatively low yields with respect to other Chilean wine regions. Cool climate conditions allow the fruit to ripen more slowly, resulting in grapes with plenty of aromas and flavors in white varieties.

The grapes were picked in March resulting in a good balance between alcohol and acidity and to produce a wine that is very fresh, lively, and persistent. After a 12–15 hour cold soak the must was decanted prior to fermentation with specific yeasts. The reductive fermentation took place in stainless steel tanks at low temperatures (12º–15ºC / 54º–59ºF) with selected yeasts to highlight the characteristic Sauvignon Blanc aromas and flavors. Upon completion of the alcoholic fermentation, the wine was held for just 4 months to work the fine lees to achieve the optimal development of its aromas.

As South America’s largest organic producer, their spectacular vineyard and winery at Los Robles has the added benefit of being biodynamic and features the sensory delights of roaming Alpacas, dung heaps and dynamised biodynamic mixtures to treat the vineyards
